New Restaurant Rosario To Open In Josephine's Tagaytay

When Cavite’s popular restaurant, Josephine’s, quietly closed on New Year’s Day, we felt a pang. The Tagaytay dining spot had been serving its best selling bulalo, seafood dishes, pancit, and other specialties for 27 years along the ridge. Before that, Josephine’s was already an iconic restaurant first opened in Kawit, Cavite, that became famous for showcasing Cavite's fantastic fresh seafood, with such classics as talaba and bouillabaisse selling like hotcakes. It was always a favorite place for families, with a space large enough to host wedding banquets, and frequented by nostalgic balikbayans longing for a taste of home.


So it’s exciting to share the news that a new Filipino restaurant will be opening its doors very soon in the very same Tagaytay location formerly occupied by Josephine’s. Rosario promises to be a dining destination that will excite food enthusiasts, continuing Josephine’s legacy of serving traditional Filipino comfort food — this time from different regions of the country.




A peek into the menu reveals mouthwatering Filipino favorites like Sinigang na Liempo sa gabi at kamias, Quesong Queso Kaldereta, Adobong Baboy sa Puti, and Crispy Pata. There are intriguingly-named dishes like Kinamatisang Baboy and Chop Suey Binondo, as well as a great selection of inihaw and sabaw. Cavite’s cuisine is represented in Pinalutong na Tawilis and the amazingly-named Nagbabagang Bulalo Special that we can hardly wait to taste.


These dishes will be made following heirloom recipes using fresh ingredients and traditional cooking techniques. Perfect for when you want evoke happy memories of huge gatherings around the family dinner table.
