If you look at the calorie count from the website Myfitnesspal, 100 grams of beef tendon and ligaments have about 150 calories and 36 grams of protein. If you compare that with 100 grams of plain beef, the meaty part of the beef has 259 calories, 15 grams of fat and just 28 grams of protein. So strictly on a calorie count basis, it shows beef tendon is low in fat and carbohydrates, and is therefore less fattening than your regular beef. It also has more protein which means it’s good for building muscles.

So what’s the verdict then? It looks like beef tendon is a healthy source of protein and calories. The only caveat I see is that you can’t really eat too much of it on its own. So while tendon per se is good for your health, you will need to watch your intake of rice that usually go with it.
