For ramen so good it has a cult following, there can only be Ramen Ron, a tiny restaurant in Makati where legendary Japanese chef Tamura Hiroyuki celebrates ramen with authenticity and reverence for tradition. The restaurant itself is a contemporary, laid-back space where ramen aficionados and Japanese cuisine enthusiasts can unwind, relish in the flavors, and feel a genuine sense of belonging.

Ramen Ron is and always will be your neighborhood ramen-ya.

But this month, Ramen Ron is stepping out of its comfort zone and doing something new. “I have known Jorge Mendez for a long time. In many ways, I consider him family,” says owner Amado Forés. ”We are so proud that not only has he made his restaurant, Mōdan, one of the best in Manila, but also Jorge is finally being acknowledged as one of best chefs in the Philippines that we always knew he was,” Amado continues.

On August 18, Ramen Ron will introduce a new and exciting offering on their menu: the Ramen Ron x Mōdan Tsukemen Set. For a limited time only, Ramen Ron’s Chef Tamura is teaming up with Jorge Mendez of Mōdan. Together they have created this unique collaborative dish set, made up of two key components. The main component of the set is a Tori Gyokai Tsukemen. Served as a side dish of the set is a Karai Karaage with Tsukemono,

“I think Chef Jorge is friendly, knowledgeable, and studious—a great person,” shares Chef Tamura Hiroyuki “This was the first time I made tsukemen, collaborating with another chef. It felt fresh and fun working with him.”

Introducing the Ramen Ron x Mōdan Tsukemen Set

The Ramen Ron x Mōdan Tsukemen Set features two of the most beloved Japanese dishes: Tsukemen and Karaage.


Tori Gyokai Tsukemen, a hearty bowl of thick noodles is topped with succulent chashu pork, menma bamboo shoots, a ramen egg, and nori. The noodles are served with a rich and flavorful dipping broth of pork, ‘silky fowl’, and bonito with steamed gyoza. The rich broth gives the dish a deep and complex flavor, the bonito flakes add a touch of umami, while the menma bamboo shoots add a bit of crunch.

On the other hand, Karai Karaage with Tsukemono is a crispy and savory chicken bun stuffed with spicy fried chicken and Japanese pickles. The pickles add a refreshing crunch to the dish, while the karaage chicken is juicy and flavorful. The chicken is marinated in a blend of spices and then fried until golden brown. The tsukemono, also known as Japanese pickles, is a mixture of cucumber, daikon radish, and onions.

Together, these two dishes make for a delicious and well-balanced meal that everyone will enjoy!


How to indulge in Tsukemen Delight

Step 1: Take a quick photo. Pinch a bite's worth of noodles with your chopsticks, dip two-thirds of the way in the broth, and gently swirl around to coat evenly.


Step 2: Lift the noodles out, slurp, and enjoy! Repeat and enjoy until your soup turns lukewarm.


Step 3: Ask your server for a ‘yaki-ishi’. Carefully add the hot stone to your soup, and enjoy your hot and revived Tsukemen!


Step 4: An option. When your broth is almost gone, ask for extra Ukokkei Broth to savor every last drop
