For ramen so good it has a cult following, there can only be Ramen Ron, a tiny restaurant in Makati where legendary Japanese chef Tamura Hiroyuki celebrates ramen with authenticity and reverence for tradition. But this month, Ramen Ron is stepping out of its comfort zone and doing something new. “I have known Jorge Mendez for a long time. In many ways, I consider him family,” says owner Amado Forés. ”We are so proud that not only has he made his restaurant, Mōdan, one of the best in Manila, but also Jorge is finally being acknowledged as one of best chefs in the Philippines that we always knew he was,” Amado continues.

The noodles are served with a rich and flavorful dipping broth of pork, ‘silky fowl’, and bonito with steamed gyoza. The rich broth gives the dish a deep and complex flavor, the bonito flakes add a touch of umami, while the menma bamboo shoots add a bit of crunch.
