Filipino content creator Abi Marquez had the opportunity to cook for renowned Japanese chef and restaurateur Nobu Matsuhisa during the latter's recent visit to Manila.

Abi gave followers a behind-the-scenes look at her process as she crafted a crispy rice dish with a unique Filipino twist.

"I've been stressing about this for weeks but here's what I came up with. It all starts with the crispy rice," she relayed.

Staying true to Chef Nobu’s culinary philosophy, Abi kept her dish "simple and focused," noting that his food is "known for clean, unapologetic flavors."

For her version of crispy rice, Abi cooked a Filipino bistek-inspired crispy rice, blending Filipino and Japanese flavors. The dish featured ingredients such as fried onions, local soy sauce, calamansi, sake, and wagyu beef.

Chef Nobu then sampled the dish and commended Abi's version of crispy rice. "It's balanced, the flavor... Everything is the perfect balance," he remarked.


Fans online were quick to react to Abi's video.

Chef Nobu is known for his fusion cuisine blending traditional Japanese dishes with Peruvian ingredients.

He recently visited Manila to host a two-night intimate dinner on March 25 and 26 at Nobu Manila located in City of Dreams Manila.

Abi was recently nominated for the 29th Annual Webby Awards under the Creators - Food & Drink category, marking her second consecutive nomination following her Webby People’s Voice Award win in 2024.

She was nominated alongside international digital food creators, including Joshua Weissman, Andrew Rea (Binging with Babish), and Olivia Tiedemann.
